Creamy Cucumber Salad

I was feeling just a tad nostalgic and was thinking about my Mom a lot this week. Maybe because, Mothers Day was just here, and I can’t physically see/hug her. Maybe it’s because, my Birthday is right around the corner, and I usually see her on my Bday weekend. Maybe it’s the fact that I smell summer in the air. I’m not really sure what it is, it could be all three. But I do know that I love cucumbers and I love cucumber salad. My mom used to make this salad all the time when I was growing up. It was in the fridge at least every other week. It’s so simple it’s crazy. 6 -7 ingredients. A great side anytime of the year.

Now this salad does not call for cherry tomatoes, however my family loves cherry tomatoes. And the ones I have right now are sooooo sweet like candy. I just had to add them.

Ingredients

• 1 seedless cucumber skin peeled off and cut into half moons

• 1/4 of a red onion thinly sliced

• 1/4 cup of sour cream (original)or greek yogurt

• a touch of honey

• 1/4 cup of freshly chopped dill or 1 Tbsp of dried dill

• A good pinch of salt and heavy on the pepper

• cherry tomatoes cut in half

Directions

In a bowl combine all the ingredients and stir until sour cream is thinned out and everything is coated. You may need to add a small amount of water to help thin out the sour cream.

You can either serve this right away or place in the fridge for a few hours. If you place in the fridge for a couple of hours, flavors will explode more. Great to accompany chicken wings, burgers and or any great Bbq dish.
